Nature's Bounty
Everything is so fresh, dazzling and glorious at this time of the year. Mother Nature surpasses herself, producing so much beauty. Every day there is something new to enjoy and marvel at. So many flowers, every colour and hue imaginable. Each and every one a miracle and a reason to rejoice in the sheer joy of being alive. The birds are busy, bustling around collecting material for the nests which will be home to their young, another yearly miracle of nature. To be able to capture all of this with my camera is a treat and I hope that you enjoy these images too. Until next time. Sandi x

Fresh young rhubarb picked, washed and investigated by the cats who had the sense not to try eating the leaves. Gently cook the chopped stems, together with some finely chopped fresh ginger, in sugar and water. When the rhubarb is softened, strain through a sieve and return the liquid to the pan. Continue to cook the liquid until it is reduced to a pale pink syrup. Use the fruit and syrup mixture as a topping on a plain vanilla sponge cake. Top with fresh whipped cream and enjoy:)
